Can I replace the glass without replacing entire assembly

I have smashed the glass on my mid 2012 15" MBP. I have found the glass available online, however I seem to remember hearing that the entire display assembly needs to be replaced. (Maybe it was for the retina version?)

Can anyone clarify that I just need to replace the glass and not the whole assembly.

I've done it and won't do it again. What a mess. The old glass comes off in shards and the rubber melts and gets all over. You might search on line for a pro that will do it at a reasonable price.

I would opt to buy the display with the glass, LCD and cover all as one piece.

Yes - see step 16 note it's an advanced DIY repair, perhaps better left to someone with experience… but the glass would come off the old one and go back on the same way as earlier models.
