Is it possible to change the internal memory chip with soldering?

How possible is it to change out the internal flash memory on a iPhone 5s motherboard from 16 gig to a 32 gig? In short, is it like replacing a hard drive with soldering?

Ed Dugan, not even close. It's a BGA that needs to be reballed. For that you need special equipment, good skills and plenty of practice. take a look on here for more info.

Hardware is not the problem, how do you reprogram the new chip?

My thoughts are, if I do the transfer and plug it into iTunes and reinstall ios 8.4, in theory it should work, as it would probably detect a problem, and ask me to restore.

The IC has to be programmed so that it "talks" with your phone. This is not an iPhone firmware programming, this is programming to make the IC function.
