You'll need to crack open your G5 iMac to remove the HD. Follow the IFIXIT guide for your given model from below:

You'll then need to connect it to a SATA to USB adapter. Here's IFIXIT's unit: Universal Drive Adapter to connect to your new system.

As to the needed tools a set like this should do you: IFIXIT 54 Bit Driver Kit.

Lastly, you'll need an ESD mat and wrist strap: ESD Mat & Wrist Strap.
