Machine description: MacBook Pro 15, A1211 with Intel Core 2 Duo 2.16 Ghz. Currently has 2GB installed, goal is to get to 3 or 4 GB, can i re-use one of the two 1GB Ram chips ? Or do I have to buy two new chips ?

Yes you can use one of your 1 GB sticks with a 2 GB stick to make 3GB. Good luck.
