Wiping or even removing the drive/s won’t alter the ability to locate your Mac. All it takes is the system to get plugged into the internet either directly or via a proxy.

Depending on the release of macOS you have installed the connection via Ethernet or WiFi will give way the systems location. With Catalina and iOS/iPadOS 13, Apple added Bluetooth so any one that walks by the system the systems location will be discovered as well via the iPhone or iPad proxy.

Had a customer and they broke into his car and got his MacBook Pro 2017. That morning the thieves turned it on and wiped the drive and tried to do an internet install. As soon as it hit the internet, it was located using Find My Mac on my customers iPhone. He had already reported the break in and called the officer that took the report and gave them the location. The thief was in jail by noon. The customer picked it up and was at my door by 2:30PM. I reinstalled the system and downed from his iCloud and delivered it back to him by 5:30 PM the same day.
