Why does my truck shut-off when I hit my gas pedal?

My truck normally needs a spray of starting fluid to crank and then once I shift into gear it tends to shut down or idles for (4 or 5 mins) and then it cuts off or soon as I hit the gas to rev the engine or drive it shuts down

This sounds like a MAF (mass airflow sensor) related problem. You should be getting getting a "check engine" light on your dash. That it to Auto Zone and ask them to do a free computer read on your engine and see if the problem shows up.
