Disable Water/Ice Dispenser Totally (GE Refrigerator PSC23SGMDBS)!

Many, many problems with this in-door dispenser. Is it possible to totally disconnect all dispenser functions but still allow the ice maker to work? In other words, not shut the water off at the valve behind the refrigerator, shut it off somewhere where just the dispenser is affected? Tired of leaking, accidents, noise, numerous repairs - I prefer to open the freezer door and get ice. I don't need this troublesome, unnecessary feature.

Trace the line back to the source and cap it off.

I've disconnected the water line under the freezer door. There's a quick connect coupler there. The supply side does not appear to be leaking but if I do cap it might there be a buildup of water eventually , somehow in that tube?
