Do the RAM chips need to match?

Can I replace one 1GB chip with a 2GB chip with the result that I'd have a 1GB chip in one slot and a 2GB chip in the other?

You can, but apparently when upgrading memory chips it is best to replaced them in matching pairs for the best performance, ie speed. If only 1 RAM module is replaced with the correct ship specs, the system will recognize the higher capacity.
