Is there any sort of glue necessary when I'm replacing the LCD glass on my Macbook? The instructions look straightforward, but it doesn't say what or if I should be using new glue, or relying on the old glue residue left behind. what should I do?

Generally you can't reuse the old adhesive. There should have been new adhesive included with the replacement glass.
