Could you show me where is the telephony/data antenna (not the Wifi or GPS) inside a iPhone 3GS?

Does this part have a specific name?

Could I replace it inside my iPhone?

the antenna is located on the dock connector.iPhone 3GS Dock Connector Replacement this is the part you need to look at for damage or loose connection ..labelled no.7 if reseating that connection doesn't work you may need to replace the dock connector.
