Can I replace the Logic board to upgrade my RAM?

If I replace the logic board of my 2018 Four TB MBP with an equivalent logic board from the same year/model, but with 16gb and possibly an i7, will it work correctly? Are there any security issues, i.e. with the T2 chip that would break functionality?

The ability to fit in a different logic board is not the problem it will fit in just fine! The rub is the TouchID button. The logic board you get needs to come with it as they are married to each other.

So that leaves the bigger question on who offers the part that you can trust is clean. There are only a few companies I trust as one day you might find your self locked out of your new board as the original owner has locked it via iCloud.
