Are the sensor and mic cable interchangable between the 3G and 3GS
I just want to know if i can put a sensor cable from a iPhone 3GS on a iPhone 3G.

I believe you can.. but I have never done this, the digitiser connector no 2 is not compatible so you would need to buy just the no3 flex not the entire screen. hector truong may know with more certainty. If you look on ebay it is listed as 3g/3gs part...

yes but on ebay you can find digitizer without LCD for iPhone 4.

hector wrote the guide you have linked, he's one of the users on ifixit and does repairs in his spare time.. he's got a blogspot/email on his profile. click on the link and then his name should get you to him. I'm not sure why you talk about the iphone 4. it is not compatible with iphone 3. buying digitiser and lcd for iphone 4 is a whole different problem as they are fused together. iphone 3 they are separate. you only need to buy the iphone 3g earpiece/proximity sensor flex.
