The newest iMac is just a speed bump from the 2015 model. Here is the 2015 IFIXIT teardown you can review: iMac Intel 27" Retina 5K Display Teardown

So far Apple has stayed with socketed CPU’s in the 27” models, unlike the 21.5” which has been a bit of a hit or mis as the low end model was soldered. The newer 21.5” 2017 model is back to a socket! So Apple appears to have heard the cry’s iMac Intel 21.5" Retina 4K Display 2017 Teardown

OK, so it’s socketed you still have limits here on what you can put in! You can only use the chips Apple has used in this series. And we don’t know what Intel is upto as far as sockets in the next round of CPU’s so if you are thinking jumping to the next gen forget about it!
