How do I copy my 500gb hard drive to 2-250gb hard drives?

I plan on installing 2-250gb SSD (Samsung 840's) in my late 2011 Mac Mini. I have just under 300gb on my current (500gb) hard drive. I have a strong feeling that the cloning hardware will not be able to deal with this particular situation. Any suggestions for how to deal with this in the most painless way possible?

One other thing to note is that almost 100gb of this is photo's stored on my hard drive. Is there a cloning software specific enough to allow me to copy everything but the photos, and then transfer the photos to the second drive?

Any advice on how to do this would be greatly appreciated!

Cloning software does not have the 'smarts' to be selective.

But you could use the finders find {aka: Spotlight} function to isolate out the given groups of docs to then en-mass copy them or delete them.
