Answer to "Has anyone disassembled the Joy-Con control stick assembly?"Inside the joystick is a tray that holds four little plastic pieces, a spring, and a sheet that plugs into the motherboard. Two of the pieces are for movement of the controller and the other two are locking pieces that keep it all down. To remove the plate you will most likely bend some of the arms because there is glue on them, pull the metal backing of the assembly off under a napkin so you don't lose the spring. My recommendation is take a picture of each step and keep the position of the stick the same with each step, do not rotate the pieces as you take them apart and it will be easier to put back.
