Switching from still and video.

What's the name of the part that flops in and down when switching from still to video?

That's the mirror. When you look through your viewfinder, you can see everything that comes through the lens of the camera, but when you're recording video, it's not possible to see through the viewfinder as the mirror that allows this moves out of the way to allow light to hit the sensor continuously.
