considering a replacement battery

In the instructions on how to replace the battery, it says to clean all metal-metal contact points with windex, couldn't I just wear latex/nitrile gloves and avoid getting the oil on them to begin with?

Never clean anything when repairing an iPhone, unless this is a known liquid damage iphone.

Sure you could, but I think it would be much safer to clean the contacts (I stay away from Windex due to the water content, I use isopropyl alcohol) while you are working on it. That way, there is no doubt that they are clean and you will not have to worry about it after its done.
