Why is there a "no service" or "sos only" after water damage?

raquel, since your water damage is still recent I strongly suggest that you clean your iPhone. The rice is a great first aid , but it does not clean nor repair your phone. If you do not clean it properly, you might run into corrosion damage later on. First thing you want to do, is to not try to turn your phone on anymore until it is cleaned. If you continue to turn it on, you are running risk of shortening out the logic board and its components. Use this guide to clean your phone. After you cleaned it, replace the battery.
