Why is my car saying its overheating but doesnt start leaking everywhe

2006 Pontiac grand Prix3800 replaced water hose ignition coil n gaskets intake manifold water pump two thermostats back right wheel barring back brakes front wheel barrings oh yea another ignition coil and this is all since day before Christmas. Last night gauge went all the way up in interstate had only had car on for maybe 5 min didnt start smoking like it did when my radiator hose busted but when I shut it off it started spewing all over bye my belt and ignition module. Let it sit all night put little bit water in it to get home almost has leaked out im at my witttsss end HELP ME PLEASE

I’m confused does it have a leak or not, if it doesn’t have a leak it may be the coolant temperature sensor acting up or it could have air in the system still, these engines have a coolant bleeder screw on the top of the engine that needs to be open to bleed all the air out of the coolant system.

let the motor get cold, drain the system, refill it with the correct coolant/water mix to the max level, bleed the system (most important thing to do or this will make it overheat with no obvious culprits). Turn the engine on and let it idle and get up to temp with the hood open and just watch for any leaks underneath too, even a small one may take a while to notice, keep and eye on the temp though and turn off if you need to. If you can’t find a leak then that’s narrowed it down a bit. if you’ve already replaced the water pump and thermostat and are confident that they are functioning as they should I would check the radiator and fan next.
