Is it possible to have NVMe only on iMac 27" late 2014?
I have iMac 15.1. I have 512GB SSD installed on SATA bus.
No NVMExpress devices reported.
I plan to get 2TB NVMe SSD from OWC and remove SSD.
Is it possible to have only NVMe drive?
The drive appearance in the OS:
Is this a good question?

Let's gets some clarity on your current configuration. What is your current drive? Is it a SATA drive that replaced the original HDD? Or is it a PCIe/NVMe drive that Apple had installed from the factory.
Also what is the size of drive you are planing on putting in?

I have only regular 512GB SSD instead of HDD. It appears as APPLE SSD SM0512F under SATA. It was installed by Apple during initial buying.
I plan to install 2 TB NVMe.
No NVMExpress devices reported.

The model seems to have been listed as compatible on OWC website https://eshop.macsales.com/item/OWC/S3DA...

I'm a bit confused! A SATA listing tells me you have a SATA HDD (unless you switched it out) The Apple SM0512 listing it telling me you have a blade SSD NVMe/PCIe 3.0 x4
So it sounds you may have two drives in your system. Did you buy your system used?

@Dan, I added screenshot:

NVMExpress tab says: This computer doesn’t contain any NVMExpress devices. If you installed NVMExpress devices, make sure they are connected properly and powered on.
When I bought iMac I ordered custom configuration with SSD. I actually bought the device through Apple web store and picked up later.
