I got an iPhone 7 that need work done to it, and put a new battery in. Immediately i turned it on, and noticed the motherboard getting extremely hot, and I could smell a terrible burning smell. The battery is brand new, so it must be the phone. What should I do

There is not much you can do if you haven’t got the proper tools and equipment. First I would try another battery and double check your flex connectors. If they are all good you will need to find what power rail has become faulty. What you can do is remove the motherboard from the housing and check there isn’t any bridging between components such as a small screw or piece of wire. Other than that you will need someone who has the equipment and skills to diagnose the problem.

Unfortunately for the OP, they have allowed the magic smoke to escape.
For those who don't know, electronics work because of the magic smoke contained inside every component (never mind all that quantum physics BS ;-). When the magic smoke escapes, the component ceases to function properly and board failures can occur. There's even a Latin phrase explaining this scientific concept (Post hoc ergo propter hoc).
In some extreme cases, the magic smoke gets captured photographically during its escape.
Unfortunately, the secret to refilling the magic smoke was lost long ago. Our technician ancestors from the seventh decade of the twentieth century (according to the Gregorian calendar), possessed that knowledge. Some say that technicians from a company called IBM even carried around canisters of Magic Smoke to replenish the failed components (photographic evidence here. Sadly today, we can only replace the components with new ones that still contain the smoke. Ah, how times have changed!
@refectio A can of magic smoke. Yes; the kit use to come with a single TGPIFS, an applicator pre-filled with spore powder and is capable of resurrecting approximately 20 ICs unfortunately they were only for sale on April 1.
