My MacBook 12” is completely functional except the trackpad. Would I only have to replace the track pad and the trackpad flex ribbon cable?

You can also buy the ribbon cable here: MacBook 12" Retina (Early 2016-2017) IPD Flex Cable

I would inspect the connectors for liquid damage first however. I also don't think you would need to replace the cable necessarily. If you can't clean out the damage, just a replacement trackpad with your original cable will probably work fine. I would try that before buying a replacement cable as well. Especially if your keyboard still works.

You can buy a replacement trackpad for your laptop and follow this guide to replace it.

Look through iFixit’s Electronics Water Damage guide and make sure there isn’t any corrosion or other damage internally. If you notice minor corrosion or liquid damage to the trackpad you could try fixing it with the techniques outlined on that page as well, before buying a replacement.
