Is it possible to change GPU?

Is it possible to change the GPU from 512MB to 2GB?

but maybe i can change the complete mainboard with the better cpu and gpu?

The best you can do is go to for a logic board replacement is: iMac 27" 3.4 GHz i7 (Late 2012)

No. Even if you were to solder on more memory, you would still require a custom BIOS. I recommend an eGPU.

The 2011 is the last iMac with a removable GPU MXM card.

The question was more about the video RAM "GPU from 512MB to 2GB"

If he wanted to he could jump to the higher model 2012 logic board which has: NVIDIA GeForce GTX 675MX graphics processor with 1 GB of dedicated GDDR5 memory, the low end model only has 512 MB. 1 GB is the best you could do in 2012 series.

Not following you here, all of the 2012 iMac13,2 logic boards are interchangeable.

To be honest, I don't think its worth it, I would just buy a newer system if this is important and sell this one.

It may be possible to change the entire logic board in the iMac but that would be both expensive and impractical. As Jake suggested, an eGpu would be a better option if your iMac allows it.

The older Thunderbolt eGPU's are no longer on the market anymore. The ones being sold now are the Thunderbolt 3 USB-C versions.
