Can a 500gb / 7200 rpm hard drive replace a 320gb / 5400 rpm

In short, yes. Basically any SATA hard drive can be installed. I replaced my stock 250gb in my 09 MacBook with a 275gb Crucial SSD a few years back.

Thanks , I thoughtvso, but it does not to be the case , as the 500 GB /7200 rpm does not seem able to ask for/ orm the operating system

@oleleif You probably just have to format it with disk utility once you boot into the installer otherwise it will just show as a blank drive Mac Os is not able to install to. Consider that the 7200rpm drive will create a bit more heat..be ready for it.
You maybe hitting a SATA I/O speed issue. Your system is only a SATA II (3.0 Gb/s) while the drive you got is a fix speed SATA III (6.0 Gb/s). You'll need to get either a fixed speed SATA II drive or an auto sense drive (one that supports multiple SATA speeds) as an example the Samsung 860 EVO Note the interface line in the spec sheet lists all three SATA data rates. Review your drives spec sheet if it does not list multiple I/O SATA speeds its fixed at the one speed.

I think that my Mac Pro do not have the speed flexibility so the 7200 rpm does not work.
But I tried another 5400 rpm (used) hard drive, and when started it shows a Microsoft (angled window) in say "preparing for automatic restore," and just stays this gets me to believe that if I can Clean this hard drive for the Microsoft content it most likely will be able to find and restore the Apple OS X .
Any comments / suggestions
