Do I need a Anti-Static Mat when I’m fixing my iPhone on wood table ?

I would encourage you to get the mat.

In the dry winter, static electricity is more prevalent which is what causes ESD damage. The cloths you wear the flooring and your work area all can be sources of static, so using a ESD mat that is properly grounded and using proper ESD practices you should be fine.
