Why does Touch ID forget my finger?
I can set up a Touch ID but within a few days it stops working. Is this a fault with the phone or my fingers?

Your home button may be defunct. But before you blame it on the phone, ensure you don't have any dirt, water, peeling, dead skin, ezcema, or blisters on your fingers that seem new.
Firstly, try to just reboot your phone. It could be merely a hiccup.
If that doesn't work, than its likely a hardware issue. Take a look inside. I think the site has a guide for this? Not quite sure, but opening a 5S isn't quite as hard as the new models.
