I have a series of old mobiles samsungs and Nokia’s that I’d like to recycle but need to know the best ways to save pictures and data before donating them and clearing any sensitive data

First off, you cannot use Nokia phones to transfer photos. Anything above the Samsung Galaxy S3 will work for the Samsung method. If you are gonna get another or new Samsung phone, try the Samsung Data Transfer tool. If you are getting a S8, or Note8, they have the app preinstalled. Make sure to load the transfer tool on both phones. Choose "old phone" on your old phone. Choose "new phone" on your new phone or other phone. Choose wireless. Make sure that both phones are on the same Wifi network. You can choose which things you can save. You can transfer Contacts to Memo's to Wifi networks to Apps to photos. If you are using another iPhone or a new iPhone, get the Switch app on both devices. The switch app is noob-friendly. Follow the steps on the app.
