How can I replace just the keyboard?

Unfortunately, I spilled coffee on the keyboard. After letting it dry and opening if the back cover, I inspected my laptop and cleaned the coffee stains it had. Fortunately (kind of) it started working again. After a few weeks of regular use without any issue, I noticed that my screen went go out in the middle of typing (OH NO!) and couldn't figure out the reason. I didn't know what was actually happening when the screen turned off. After troubleshooting, I noticed that my laptop was actually going to sleep. It would go to sleep after I pressed a key on the keyboard. Interestingly enough, I connected a mouse and keyboard via USB and I had no issues. I literally could use my laptop like normal if I used external keyboard and mouse. I confirmed that it was fully functional after a day of using it like a desktop by also connecting a monitor to it as well.

My conclusion (just assuming, could be wrong) is that the keyboard is/was creating a short which results in triggering my laptop to sleep. Super strange... I know..

Is there any alternative answer than replacing the whole bottom case?? Can I just replace my keyboard?

The keyboard is incredibly difficult to replace. Once you do successfully replace it, it won't be the same again due to the way it is attached to the topcase. The best bet is to replace the whole topcase assembly with keyboard attached.
