After I take a series of photos and go to gallery to view them I can see the files there and the size of them all but can only see one picture as taken.
It happens every time.

Hi,
Try clearing the data in the Gallery app.
Go to Home > Settings > General > Apps > then swipe the screen to view All apps,(it should show something like 'Downloaded, Running, All etc across the top of the screen as you swipe from right to left), then scroll down until you find the Gallery app and tap to enter.
Tap on Clear Data and follow the prompts.
This will clear the data cache in the Gallery app. It will not delete your pictures It is just the information that the Gallery app has about your pictures which may have become corrupted.
When finished return to the Home screen and start the Gallery app as normal. It will take a bit longer to start as it has to build up a new data base of all your pictures.
Hopefully when this is complete you will be able to view all your pictures.
