Replace optical drive with graphic card

I have a MacBook Pro 13'' early 2011 and I want to upgrade it by replacing the hard drive with a SSD. I also read that it was possible to replace the optical drive with a second SSD and I am wondering if it is possible to replace it with a second Graphic card instead.

No.

Your solid state drives operate using the SATA bus, which is for transferring data from mass storage devices.

Modern graphics cards operate using the PCIe bus, which is for transferring data from internal peripheral devices.

Both of these are not intercompatible.
