Completed the iPhone 5 battery replacement and now my power (sleep/wake) button no longer functions. Is there a connector I might have accidentally dislodged while removing/reinstalling the 3 connectors near the power button? Or some other damage I may have done?

If you pryed the top part of the battery then you probably have partially damaged the sleep / wake ribbon cable flex assembly.
There is one smaller connector near the 3 front panel connectors, that one is for the power / sleep or wake button along with volume and vibrate.
Note that if the battery isn't glued down it can damage the cable too. The cable runs right under the upper part of the battery.

I just confirmed that the volume buttons are not working either, so you are likely correct. I'll disassemble it again tomorrow to see if I can confirm.

My volume buttons are ok, but on/off and home buttons won't work. Any idea?
Check the home button ribbon cable on the display assembly to see if it has any physical damage like tear on it.
Also check the charger port ribbon cable if it's ripped or the home button connection golden prongs that contact with the home button to see if they are bent / missing / damaged.
Vol up + Down, Vibrate connection, power button are all part of the same volume button cable. You will need to replace it as the whole cable since any one of those requires it to be replaced anyway.
