Why can't I update my iPhone

I have 10 gb of storage but when I want to update it from iOS 7.0.3 to 8.4.1 it says and error occurred whilst trying to update and I don't know why

This is because the current iOS version you can update to right now is 9.3.2 and 9.3.1. I don't know they make it say 'unknown error or an error has occurred' when it's actually due to not allowing you to install the update as they have blocked updating to older version other than the ones they allow you currently which are 9.3.2 and 9.3.1 as said above. You will have to do the system software / iOS update through iTunes unfortunately.

Would of been nice if they implemented a delete downloaded update feature in the settings app but I doubt they ever will.

So yeah plug the iPhone 5s with the lightning cable to the computer and run the latest version of iTunes and hit update. It should update your phone with no issues.
