How much RAM can I install and is there a specific model

I have a Mid 2009 MacBook Pro 2.53 GHz Intel Core 2 Duo 4 GB of RAM

I would like to add memory to it. It is primarily a backup computer but I do use it for some photo editing while traveling. I'd like to get it up to at least 8 GB maybe more.

Couple of questions. How much memory can I use? And are there specific types of RAM to buy for this model?

Your system uses standard 1066 MHz PC3-8500 DDR3 SDRAM it can support up to 8 GB or RAM using two 4 GB memory modules.

You will need to remove the current 2 GB modules (4 GB total) follow this IFIXIT guide: MacBook Pro 13" Unibody Mid 2009 RAM Replacement

Thanks - any recommendations on the type? I see several on Amazon with a wide range of prices

I would stick to one of the major name brands. While they will be a little bit more you get the ability to get it replaced without much effort. The real cheap suppliers don't offer much support if any! You may end up holding the bag... Then you'll need to buy another set.
