Install single 2.5" SSD?

How can I install a single SSD in the main Hard Drive slot without the fans running at full speed? It's a Samsung 850 Evo, so no other connectors for a thernal sensor cable.

You need to use this cable: OWC In-line Digital Thermal Sensor for iMac 2011 HD or SSD Upgrade. It makes no difference who's SSD you use they all require it.

Here's some background info: SMC issues

Even though this is a 2010 model? Doesn't Yosemit support TRIM?

The first cut of it didn't, the current version gives you a way to enable it. You don't need TRIM enabler software. It's a simple command line you type in a terminal window and it's done! Latest OS X update allows you to enable TRIM for third-party SSDs.
