Options

The 27" model uses a 3.5" drive, your 21.5" model uses a 2.5" drive this cable won't help you.

The only way to add a SSD is finding an M.2 blade SSD (a used Apple unit).

This is what it looks like Apple SSD. A very different SSD! Again you need a real Apple SSD. Others won't work correctly as they won't have the needed firmware on them.
