Yes, its possible.

But, is it cost effective to do given the age of the system?

A cheaper solution is replacing the HD with a hybrid SSHD. That way you gain the speed of the SSD, but still get the deeper storage of a HD.

Update

Heres a link to a good write up describing the difference storage: SSDs vs. hard drives vs. hybrids: Which storage tech is right for you?. While a bit dated the basics are still the same today.

Heres a link to Seagate's SSHD info page: Desktop SSHD.

And lastly, heres a chart on the performance comparing all three: Summary Performance Chart.

Basically, Yes a SSHD is fast in boot up. They do slow down to the same speed as a HD when saving data or need to access data which has not been cached. SSD's are faster, but they have some issues. The first is the cost for what is now seen as a baseline storage (500GB ~ 1TB) for a system. The second is third party drives don't have full access to Apples low level SSD services in the OS. This is where people have installed TRIM Enabler to off set this. But Yosemite killed using TRIM Enabler without turning off file signing which prevents low level services from being hijacked by an unfriendly app/trojan. Without TRIM Enabler garbage collection and even file saving gets bogged down as the drive gets full and when working with large number of files and larger sized files.
