Why are you removing your current HD? I would just add in the SSD as a second HD using the dual drive kit: Installing iMac Intel 27" EMC 2429 Dual Hard Drive Kit. Remember your system has a spare SATA port just for a second drive (HD or SSD).

If you need to replace your current HD as its dying (or dead) then I would replace it with a SSHD vs a SSD. You also need to worry about the HD's internal thermal sensor compatibility. If you get a Seagate SSHD unit which has a Apple logo on the box you can just pop it in. With it you get the speed of a SSD but the deep storage of a traditional HD the best of both!

If you get an older or another HD drive that is not directly compatible you'll need a special cable by OWC: OWC In-line Digital Thermal Sensor for iMac 2011 Hard Drive Upgrade. That way any 3.5" drive will work and if you really want just a SSD as your primary drive you'll need this as well (and an adapter frame).

Seagate ST1000DX001 3,5" 1000 Go SATA III

This one would work perfectly right ?

Yes, that's the one to get. Just make sure the box has a OS-X logo on it as this is the rev drive you want otherwise you'll need the OWC cable.
