Seems like it's possessed by a demon, what part's gone wrong?

While using the phone, on a call the other day, it went absolutely crazy and phantom touches happened all over the place. Hung up the call, opened and closed tabs, changed the date and time, then eventually went into airplane mode.

I'm able to plug in and view the logcat of the phone, and I really don't think it's a virus, or anything like that looking at what's going on (I'm a mobile developer by profession), so if it's not that, any idea what could be happening?

The digitizer is malfuctioning in your phone. You need to replace the digitizer ( digitizer is the touch pannel which you touch while using your phone.

Thanks for the reply Ashwin, could you elaborate, and maybe point to where I'd purchase the replacement?

Are you talking about the Synaptics S3350B IC provides touchscreen control mentioned in Nexus 5 Teardown ? Or something else, as in the touchscreen itself?
