Replace Processor i5 for i7

I have a Macbook Pro late 2011 i5 2.4 GHz Can I replace the processor with an i7 quad core (sandybridge) or even an i7 Ivybridge, once the socket is the same?

No - you might be able to replace the entire logic board, though IMHO it would not be cost effective. The components are soldered to the logic board. It takes professional (special, expensive) equipment to desolder/solder logic boards. You could not replace the CPU with just any faster one, due to EFI and other requirements you could only use a series that Apple offered as OEM upgrades.
