How to install Lion on a new hd?

I replaced the internal hd of my MacBook because the old one was broken. I bought my MacBook in january 2009 so I think I have to use the Lion Recovery Assistant on an USB drive. I downloaded it and put the .dmg in the USB drive.

What should I now? Do I have to startup the Mac pressing some particular key? Apple page on it doesn't seem clear.

you need to hold down the Option key when it starts up for a boot menu.
