I just upgraded the MBP from 160 to 500gb. I bought an external sata case (cheap for bare case) and put the new 500gb drive in. I used free SuperDuper to create a backup copy of existing drive onto the 500GB drive in the sata case. I tested it by booting from the sata drive (mine is USB 2.0) on another Mac and the backup booted perfectly. I then swapped out the old drive for the new drive using the ifixit procedure shown here. Get the torx screwdriver first. It took about an hour for all the swapping and it took SuperDuper about 3 hours to create the bootable copy. I also run Parallels on the MBP and everything including my Windows started up exactly as before with the old drive. Good luck.
