I spilled coffee all over my Macbook Air. It's dead. I hadn't backed up in 3 weeks. And I need the information on the hard drive. If I buy another Macbook Air, of the same vintage, can I just swap out the SSD?

Yes - or you can buy an external case for the SSD and access it from a new machine.
