I didn't notice in the teardowns where the storage module was (16Gb/32Gb/64Gb)...did I just miss that and how would you replace it?

In the tear down, the memory was on the Logic Board, so technically, you could, but you would have to replace the entire logic board to do so. I don't think it would be worth it.
Yup; it's not possible, it's soldered down to the board. BGA, at that.
