I had my 7th Gen Ipod Classic audio jack fix, but sometimes the audio still goes in and out, like the left side sounds really low, like it should be playing through the right ear side. if i had the audio jack fix, what else could be the problem ?

You have a bad headphone jack flex cable. Order the part and replace it. I t is not that difficult but getting the case opens is very difficult, without damaging it. I have found a method to open these with damage. If you do damage it no worries, they are less than 20 dollars for a new back housing. Since you need to replace headphone jack, only the battery is left to put in another housing.
