Convert 1st Gen iPhone to iPod touch

I have upgraded to an iPhone 3G but still have my 1st Generation iPhone. AT&T switched out the SIM card. My question is can a first generation iPhone be used as an iPod touch for Apps, Games, Wifi, etc. I want to pass this on to my kids. I tried the direct approach but my computer won't recognize my iPhone without the SIM card and AT&T won't sell just a SIM Card without an account.
